Dessert - Baked Alaska
(Serves 4)
Ingredients
- 1oz melted butter
- 2oz sugar
- 2oz flour
- 2 eggs
- 4oz raspberry jam
- 4 scoops vanilla ice-cream
- 4 eggs whites
- 1/2 lb castor sugar
- pinch salt or lemon juice
Method
- 1. Whisk eggs and sugar over hot water to ribbon stage.
- 2. Continue beating until cold before folding through the flour and finally the melted butter.
- 3. Bake immediately in a moderate oven for 25 minutes, spread onto an 8in square tin.
- 4. When the sponge is cool, spread the jam on the top and cut the sponge into 4 inch squares.
- 5. Whisk the egg whites, 1/2 lb castor sugar and a pinch of salt or lemon juice until it forms peaks (meringue).
- 6. Put a scoop of ice-cream onto each square and pipe the meringue so no ice-cream is showing.
- 7. Put Alaskas onto a baking tray and straight into a hot oven (230°C/450°F Gas Mark 8).
- 8. Bake for 3-5 minutes. Serve at once.
